Único 2014 — A cool vintage with a staggered harvest. More Atlantic wines, with balance, freshness and an acidity that promises very long ageing.
A return to classicism: a balanced year of unhurried ripening, producing a textbook Único. Bright, clear garnet. The nose, still in full transition, alternates precise red and black fruit with liquorice, cedar, tobacco and a fresh balsamic note; pure definition. A medium-bodied, perfectly knit palate, with fine tannins, an elegant acid backbone and a long, aristocratic finish that invites another glass. Beginning to enter its ideal window; a model of proportion rather than power.
More than ten years from harvest to release: six in oak barrels (new and used) and three to four in bottle.
Tinto Fino (Tempranillo) around 95% and Cabernet Sauvignon.
Noble red meats (aged beef, oxtail, big game), black truffle, squab and great aged cheeses.
16–18 °C. Long decanting —at least two hours— for wines with medium ageing; double decanting recommended for older vintages.
