Único 2013 — A long, cool cycle with a late harvest. A subtler Único, classic in profile with lively acidity, very fruity and aromatic.
A cold, Atlantic harvest, the lightest of the range, and an Único that turns lightness into a virtue. Medium-deep ruby-garnet, the most transparent of its siblings. Fresh, delicate aromas —raspberry, pomegranate, rose, tea and a touch of white pepper— with the oak drawn in fine brushstrokes. On the palate it is slender and easy to drink, with subtle tannins, crisp acidity and a fragrant finish; it lacks the depth of the great vintages but has charm to spare. To drink now, almost like a Burgundy from Ribera.
More than ten years from harvest to release: six in oak barrels (new and used) and three to four in bottle.
Tinto Fino (Tempranillo) around 95% and Cabernet Sauvignon.
Noble red meats (aged beef, oxtail, big game), black truffle, squab and great aged cheeses.
16–18 °C. Long decanting —at least two hours— for wines with medium ageing; double decanting recommended for older vintages.
